Salad & Dressing Recipes

3 scallions chopped
½ cup fresh basil leaves
2 Tb fresh squeezed lemon
1 ½ Tb Dijon mustard
1 Tb extra virgin olive oil
2 cloves garlic, chopped
2 ½ tsp kosher salt
1 tsp freshly ground pepper
1 cup good mayonnaise
½ cup Greek-style yogurt
½ cup buttermilk (shake carton before pouring)

Place scallions, basil, lemon juice, mustard, olive oil, garlic, salt, and pepper in food processor and puree for 15-20 seconds until smooth. Add the mayonnaise, yogurt, and buttermilk and blend until smooth. Transfer to container and refrigerate for 1 hour.

Asian Toasted Sesame Salad Dressing
2 Tb Apple cider vinegar
2-3 Tb Soy sauce
1 Tb sesame oil (optional) plus extra virgin olive oil to make ½ cup
2 tsp sesame seeds, toasted
2 cloves garlic
¼ tsp ginger

Whisk apple cider vinegar, olive oil, and soy sauce. Whiz the garlic and toasted sesame seeds in food processor until garlic is finely chopped. Combine and enjoy!

Spinach salad with strawberries and gorgonzola cheese
Ingredients for salad dressing:
Mix together equal parts:
Extra virgin olive oil
Balsamic vinegar
Seeded mustard

Serve over fresh spinach salad with strawberries, apples (your choice of fruit) and sprinkle with gorgonzola or blue cheese crumbles
