Kurt’s Artichoke Dipping Sauce
I love fresh artichokes from Castroville California and prepare them any chance I get. I came up with this great dipping sauce. Smash four artichokes on the counter pointy side down…not too hard, just enough to open them up a little. Turn them over and drizzle with California Olive Oil Company “Delicate” EVOO, dust with fresh ground pepper and steam for one hour. Sauce:
Mix together 3 Tb of California Olive Oil Company “Delicate” EVOO, 3 Tb mayonnaise, 3 Tb grated parmesan cheese, 2 Tb fresh lemon juice, ½ tsp freshly ground pepper, and a dash of salt. “Enjoy – Kurt”

Fresh Herb Dip Ingredients:
One bunch fresh parsley, washed and trimmed ( about 1 cup loosely minced)
One bunch fresh cilantro, washed and trimmed (about ½ – ¾ cup loosely minced)
¼ cup diced red onion
2-4 cloves garlic – minced
3 Tb raw apple cider vinegar
¼ – ½ cup California Olive Oil Company Extra Virgin Olive Oil
½ tsp sea salt
1 tsp fresh black pepper
Other fresh herbs to taste including marjoram, savory, rosemary, and oregano Preparation:
Put parsley, cilantro, red onion, garlic, and other fresh herbs in food processor, salt and pepper in food processor and blend quickly until combined. Add apple cider vinegar and olive oil and blend to desired consistency.  Serve with your favorite bread or crackers. 
*Add nuts to make a pesto, or more olive oil and vinegar to use as a salad dressing or as a topping on meats, fish, etc.

Salad & Dressing Recipes

Buttermilk ranch dressing Ingredients:
3 scallions chopped
½ cup fresh basil leaves
2 Tb fresh squeezed lemon
1 ½ Tb Dijon mustard
1 Tb extra virgin olive oil
2 cloves garlic, chopped
2 ½ tsp kosher salt
1 tsp freshly ground pepper
1 cup good mayonnaise
½ cup Greek-style yogurt
½ cup buttermilk (shake carton before pouring) Preparation:
Place scallions, basil, lemon juice, mustard, olive oil, garlic, salt, and pepper in food processor and puree for 15-20 seconds until smooth. Add the mayonnaise, yogurt, and buttermilk and blend until smooth. Transfer to container and refrigerate for 1 hour.
Asian Toasted Sesame Salad Dressing Ingredients:
2 Tb Apple cider vinegar
2-3 Tb Soy sauce
1 Tb sesame oil (optional) plus extra virgin olive oil to make ½ cup
2 tsp sesame seeds, toasted
2 cloves garlic
¼ tsp ginger Preparation:
Whisk apple cider vinegar, olive oil, and soy sauce. Whiz the garlic and toasted sesame seeds in food processor until garlic is finely chopped. Combine and enjoy!


Spinach Salad with Strawberries and Gorgonzola
Ingredients for sald dressing:
Mix together equal parts:
Extra virgin olive oil
Balsamic vinegar
Honey
Seeded mustard Serve over fresh spinach salad with strawberries, apples (your choice of fruit) and sprinkle with gorgonzola or blue cheese crumbles
 

Soups

Potato Leek Soup
Ingredients:
5-6 large leeks
1 large yellow onion
1 pound russet potatoes
3 Tb extra virgin olive oil
4-5 cups chicken stock
1 tsp salt
1/8 tsp fresh ground pepper
Bundle of fresh chives Preparation:
Thoroughly wash and chop leeks and chop 1/8” thick.  Chop onion. Peel potatoes and chop into ¼ cubes.
In a large saucepan heat olive oil. Add leeks and and onion and stir. Cover and cook until tender – approximately 15 minutes. Stir often to make sure vegetables do not stick to bottom of pan. Add 4 cups of chicken stock, potatoes, and salt to the pan. Raise the heat to medium-high and bring to boil. As soon as it boils, reduce heat and cover. Cook until potatoes are tender when pierced with a fork (about 15 minutes). Uncover and remove from heat. Allow to cool. Once cooled, insert an immersion blender or run through food processor until smooth. Serve with chive garnish.
