Olive Oil 101

Independent laboratory analysis are performed for quality assurance, our olive oil is then sent to the California Olive Oil Council (COOC) where blind taste testing is conducted by a panel of experts. Only defect free, extra virgin olive oil is awarded the COOC seal. The certified 100% extra virgin olive oil is bottled several times a year to ensure freshness and consistency. Each bottle is nitrogen filled and warehoused in cool storage away from damaging sunlight, heat, and oxygen.
“California Style” extra virgin olive oil describes our extra virgin olive oil made from Spanish variety olive cultivars just like the old world cuttings the Spanish Padres planted in California, circa 1779, grown in alluvial soils in our wonderful California Climate.
