Kurt's Artichoke Dipping Sauce
I love fresh artichokes from Castroville California and prepare them any chance I get. I came up with this great dipping sauce.
Smash four artichokes on the counter pointy side down…not too hard, just enough to open them up a little.
Turn them over and drizzle with California Olive Oil Company “Delicate” EVOO, dust with fresh ground pepper and steam for one hour.
Mix together 3 Tb of California Olive Oil Company “Delicate” EVOO, 3 Tb mayonnaise, 3 Tb grated parmesan cheese, 2 Tb fresh lemon juice, ½ tsp freshly ground pepper, and a dash of salt.
